AAPRO Chair (Advantages and acceptability of alternative proteins)

The aims of this Chair is to:

  • Study the consumers’ behavior on protein transition in an alternative food system, which could satisfy the increasing demand of respectful to environment food (targets: old people, teenagers, flexitarians)
  • Entomophagy and plant proteins consumption are possible ways to go to protein transition, answer to the demand of healthy food and participate to reduction of the environmental impacts of food, which is on line with the COP21 and the European Commission programs.

Duration of the project: June 2021 – June 2023
