Experimenting with the production of Sulphite Free Wines

The project

The objectives of the project are as follows :

– To co-construct, through a participatory approach involving the professional actors of the wine industry (researchers, technicians, operators, etc.), innovative itineraries (prototypes) leading to the production of wines without sulphites;

– To test these prototypes in practical situations in partner wineries;

– Evaluate the acceptability of sulphite-free wines by professionals and consumers by studying their representations, expectations and sensory perceptions.
