Development of a low-input and local apple and pear juice sector

The project :

The aim of this project is to support the development of the apple and pear juice sector in a cider-making context. On the one hand, it will be a question of characterising and proposing to operators low-input plant material adapted to these productions, particularly in line with the organoleptic expectations of consumers. On the other hand, this project will make it possible to adapt the transformation processes in order to better control the sensory characteristics of the products, always in line with consumer demands. Thus, on the production side, recommendations will be made for choosing high-performance plant material that is resilient to pest attacks for low-input production with acceptable agronomic characteristics. For processing, methodological guides and a tool for rapid measurement of polyphenols will be developed to guide operators’ choices. Knowledge of the organoleptic acceptability, in particular of the sugar and acid intensities and also of the bitterness and astringency of juices that are potentially rich in polyphenols, is a barrier that the project will help to remove. The GRAPPE research unit will be involved in the realization of an ambitious mapping of home preferences with more than 200 consumers and about twenty products as well as in the realization of sensory analysis of the juices produced during the project.
