🌿 Science is for everyone – Conference on the project Jack

Pulses from the fields to the restaurants, how to transform pulses from all perspectives?

The project Jack aims at enhancing the value of pulses in the dishes, from the farms based on an original culinary approach with a positive environmental footprint.

Pulses are underrated by consumers and its production is very low in France. The reasons behind the poor consumption of pulses come from the profit uncertainty at the crop stage till the marketing stage which is poorly represented in gastronomy due to a lack of culinary savoir-faire and due to a biased visual representation of it.

Pulses are underrepresented in research studies and in food and agricultural development. The conference held at the Paris International Agricultural Show by ESA gave an explanation on the blocking issues targeted by the project and how the multidisciplinary approach applied to all the sectors contribute to tomorrow’s solutions.

🍽 Study in the new Professional bachelor’s in marketing and value chain of the local food products for the 2024 intake

Because giving value to agricultural production is possible via the development of local processing and marketing strategies and aims at:

  • Strengthening the relationships between producers and consumers.
Recognizing the consumers and engaging the social relationships are already a strong daily motivation for our producers.
  • Bringing production value and getting an additional source of revenue.
  • Highlighting a local savoir-faire which needs to be preserved and to be back to the roots.
  • Contributing to the food resilience of territories and of the local economy.
