Understanding the added values of terroir-driven wines
main objectives
By managing terroir as a model for sustainable production at a territorial scale, the challenge as well as the opportunity here is to teach the principles behind specificities of terroir wines, collective marketing and place brand, collective organization and territorial development strategies, focusing on the creation of added values both in terms of economic, cultural and ecological values. Students will understand the economics and global markets of terroir wines, the collective marketing of terroir wines, the ecological sustainability of terroir wines in changing environment and terroir wine production as a collective and territorial development process. The lessons focus on wine production but courses are also developed on spirits, ciders and beer production.

Marketing of terroir wines: specificities of wine marketing, place brands and collective marketing
Ecological sustainability of terroir wines: production and biodiversity, wine sustainability certifications around the world and links with GI productions, eco-quali-design of technical management routes to achieve environmental and economic performances, regional dynamics of terroir wines under climate change and new challenges

Terroir concept and innovations in spirits, cider and beer production
Tool box: survey methods, focus group, sensory analysis, sociological analysis of a wine production area, characterization of terroir factors and typicity

Blended learning combining traditional lectures, videoconferences and seminars in live or online on e-campus platform, guided readings and practical tutorials.
